This is an Osiecki family recipe from Michael’s grandmother and Vera makes it all the time. This is a really good bread as it is ready in 1 hour – perfect when you need bread in a hurry!
Ingredients:
- 3 cups flour (I use organic stone-ground flour and will often use 1 cup of wholemeal and 2 cups of plain flour)
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 small bottle of beer (about 375ml), any beer is fine (I tend to try different sorts of the many craft beers that are available. They all provide a slightly different flavour to the bread)
- Seeds, nuts or dried fruit if desired
- Butter, to line pan
Method:
- Preheat oven to 190 degrees Celsius.
- Butter a bread or loaf pan.
- Place flour, baking powder and salt into a mixing bowl and give this a good stir.
- Add seeds, nuts or dried fruit to the bread at this stage, if using.
- Add bottle of beer and mix this up – the mixture should be soft and sticky.
- Put bread mixture into the tin and pop in the oven to cook for 50 minutes.
- Take it out and if you wish you can brush with melted butter, this gives it a nice shine, or just leave it as is.
The beauty of this bread is that it can be ready from thought to table in 1 hour. It’s best eaten fresh but will also toast well after a couple of days.
