These Christmas Pudding Bliss Balls will be a festive favourite! And the good news is, they’re packed full of nutritious ingredients, like nuts, flaxseeds, and protein.
Ingredients:
Makes approx. 12 (GF, Vegan)
Balls
- 8 dates, seeds removed
- 1 ½ cups nuts of choice (mix and match walnuts, almonds, cashews, or macadamias)
- 2 tbsp PHGG
- ¼ cup chia or flax seeds
- 1 tsp ground cinnamon
- 1-2 tsp ground ginger (depending on how ginger-spiced you like it)
- ½ tsp all spice
- ½ cup vanilla protein powder of choice
- 1 tbsp molasses
Topping
- Vegan white chocolate buttons
- Cranberries or goji berries
Equipment
Method:
- Soak dates in boiling water.
- Add all ingredients (except dates) to a food processor and process briefly to break nuts into smaller pieces.
- Drain dates well, reserving liquid in a separate bowl, then add dates to the food processor.
- Process well until a smooth mix forms. Add a tsp of date liquid if the mix is too dry.
- Roll the mix into balls and place in a container and into the freezer for minimum of 15 minutes.
- After the balls have set, melt the chocolate in a shallow dish. Using a spoon, drizzle the melted chocolate over the balls and top with a cranberry/goji berry on top!
- Return to the fridge for a minimum of 30 minutes before serving.
- Will keep for 1 week in an air-tight container.
